The filling recipe is quite tart. If you have a sweet tooth, consider using 1/2 c of honey or eating the crisp with ice cream.
For Filling:
- 8 cups (2 lbs) rhubarb
- 1/3 cup honey
- 2 Tbs of instant (minute) tapioca
For Topping:
- 1.5 cups oats
- 1/2 c whole wheat flour
- 1 tsp cinnamon
- 1 c pecans
- 1/2 c butter melted
- 1/2 c packed brown sugar
- 1/8 t salt
Bake in an 9x13 pan at 375 for 40 to 50 minutes.
Salmonberries
Salmonberries are a wild and delicious berry that can be found throughout the northwest. They have a wonderful tang and beautiful colors. If you want to use salmon berries, use the above recipe with the following filling:
- 8 c salmonberries
- 1/2 c dark brown sugar, packed
- 1/2 c flour (or another equivalent thickener)
- dash of salt
- Huckleberries
- Consider using a crumble (flour-based) topping and this filling:
- 8 c huckleberries
- 1/2 c honey
